Barbecue season is almost upon us. When it comes to great British summer time food you can’t beat BBQ beef burgers. 1. Steak and Red Pepper Burgers
Ingredients
1 red pepper (quartered)
2 tbsp olive oil
400g lean steak mince
1 egg
1 carrot (grated)
50g breadcrumbs
40g cheddar (sliced)
6 bread rolls (halved)
3 tbsp mayonnaise
1/4 cucumber (sliced)
Instructions
- Preheat over to 200c fan (or 180c gas). Place the pepper on a baking tray and cover with half a tablespoon of oil. Cook for 15 minutes, turn pepper over and continue cooking for another 15 minutes after.
- Remove from over and leave to stand.
- Next chop the pepper finely and tip into a bowl.
- Add the mince, breadcrumbs, carrot and egg into the bowl and mix.
- Combine the ingredients together and shape into 6 burger patties.
- Heat a frying pan to medium heat and pour the remaining oil into the pan. Cook the burgers for 6 minutes on each side.
- Add slices of cheddar and mayo to the rolls to finish. Top with slices of cucumber if desired.
2. Caramelized Rep Pepper and Onion Burger
Ingredients
1 red pepper (chopped)
1 yellow onion (chopped)
1 tsp vegetable oil
1 tsp unsalted butter
2 tsp Worcestershire sauve
1 pound of ground beef
Pinch of ground black pepper
¼ tsp salt
Instructions
- Heat a skillet or grill to medium heat.
- Add the oil and butter to start.
- Next add the pepper and onion and cook for 30 minutes. Stir throughout cooking.
- Add Worcestershire sauce and mix until fully incorporated.
- Take ingredients off of the skiller and leave to stand in a bowl.
- Add the ground beef to a mixing bowl. Add the cooked ingredients to the bowl as well.
- Combine all ingredients together and shape into 4 burger patties.
- Add salt to the patties and leave to stand for 10 minutes.
- Heat a skillet to medium high heat and add the patties, cooking for 4 minutes each side.
- Tent the cheese with foil and add it to the skillet. Cook until the cheese has melted.
- Remove ingredients from the skillet and serve in buns.
3. Red Pepper and Kale Beef Burgers with Grilled Onions and Goat Cheese
Ingredients
2 lbs lean grass-fed ground beef
7-9 kale leaves
10 red peppers
2 tbsp olive oil
1 red onion
8 tbsp goat cheese
8 burger buns
Instructions
- Add 4 kale leaves and the red peppers to a food processor and crush. Season if desired.
- Next add the kale and red peppers to a bowl with the beef. Shape ingredients into patties and set them aside.
- Take the red onion and finely slice it into thin things. Add to some foil paper with 2 tbsp olive oil, salt and pepper.
- Heat the grill to medium heat and cook for 4-6 minutes each side. Then put the onions on the grill for 25 mins.
- Add the patties to the burger buns and add 1 tbsp goat cheese.
4. Beef Burgers with Red Pepper Salsa
Ingredients
450g minced beef
1 onion (chopped and cooked)
2 tbsp parsely (chopped)
1sp soy sauce
Salt and pepper
1 red pepper (chopped)
2 large tomatoes
1 onion (chopped)
½ lemon (juiced)
1 green chilli (chopped)
2 tbsp olive oil
2 tbsp parsely
salt and pepper
Instructions
- Get a bowl and mix the beef, onion, parsely and soy sauce together until fully incorporated.
- Take the mix and shape into 4 burger patties.
- Heat up the barbecue and add your burgers. Cook for 5 minutes and flip.
- For the Red Pepper Salsa add the red pepper, onions, tomatoes and lemon juice to a food processor and combine together.
- Serve the burgers alongside the Red Pepper Salsa.
5. Chickpea and Roasted Red Peppers Burgers
Ingredients
100g pine nuts
1 tsp of olive oil
1 bunch of spring onions (sliced)
3 garlic cloves (crushed)
150g red peppers
400g tin chickpeas
30g basil leaves
100g vegetarian cheese
25g wholemeal breadcrumbs
1 tbsp olive oil
6 toasted buns
handful baby spinach leaves
seasoned yogurt
Instructions
- To start, dry-fry the pine nuts before increasing the heat.
- Next add the garlic and spring onions to cook for 5 minutes. Then set them aside to cool down.
- Place the red peppers, spring onions, basil leaves, cheese and chickpeas into a food processor and mix together until the ingredients are fully incorporated.
- Tip the mixture into a bowl and add the pine nuts and breadcrumbs. Stir several times.
- Take the mixture and divide it into 6 burger patties.
- Heat a frying pan and add the burger patties to cook for 4 minutes on each side.
- Add the burgers to the buns topping with the spinach and seasoned yoghurt.
6. Stuffed Mushroom Burgers with Guacamole and Roasted Red Pepper
Ingredients
4 large portabella mushrooms
8 oz lean ground beef
1/4 cup onion (chopped)
2 garlic cloves (minced)
1/4 cup breadcrumbs
1 tbsp Worcestershire sauce
1 tbsp sauce
1 tsp kosher salt
1/2 tsp black pepper
1 tbsp olive oil
1/2 large onion (sliced)
1/2 roasted red pepper
1/4 cup guacamole
4 swiss cheese slices
4 whole wheat burger buns
Instructions
- Take a bowl and mix together the onion, garlic, breadcrumbs, ground beef, Worcestershire sauce, soy sauce, salt and pepper.
- Once fully incorporated take the mixture and fill the mushroom with it.
- Turn grill to a high heat, brush onions with 1 teaspoon of oil and cook for 2 minutes on each side.
- Add 2 teaspoons of oil to the mushrooms. Next add the salt and pepper to the mushrooms.
- Put the mushrooms on the grill with the ground beef pointed down and cook for 5 minutes.
- Turn the mushrooms over and cook for a further 4 minutes.
- Place the burgers into a roll. To finish add the red peppers, cheese and guacamole.
7. Classic Beef and Red Pepper Burgers
Ingredients
450g beef mince
1 small onion (grated)
1 garlic clove (crushed)
1 small red pepper (diced)
½ tsp dried mixed herbs
2 tbsp barbecue sauce
25-50g fresh breadcrumbs
Salt and pepper
1 egg
1 tbsp sunflower oil
Salad leaves
Instructions
- First pour the beef into a bowl and add the pepper, onion, garlic and herbs.
- Next add the egg and season.
- Mix ingredients together until fully incorporated. Cover and leave to stand in the fridge for 30 minutes
- Take the mixture out of the fridge and shape into 6 burger patties.
- Cover the ingredients in oil and place on a medium heated grill for 6 minutes on each side.
- Place the cooked burgers into the ciabatta rolls and add the salad leaves to finsh.
